Sourced from two organically tended Alcobaça vineyards on clay soil with limestone located around five miles from Nazaré, the (world-record-breaking) home of big-wave surfing. The Atlantic climate plays into Martins’ goal of low alcohol and freshness, as does the winemaking. Picked in the second week of September, the hand-harvested grapes were de-stemmed, cold soaked in small (1,000kg) plastic vats for two days, then naturally fermented on skins for three days, during which time they were gently hand plunged (for minimal extraction). The grapes were pressed early to old 500l French oak barrels, where they completed the fermentation. The wine was bottled without fining or filtration after eight months in barrel.
