Filipa Pato’s and William Wouters’ philosophy is simple. First, to create authentic wines without make-up. Second, to focus on indigenous grapes only, namely Baga, Bical, Arinto, Cercial and Maria Gomes. They have practiced biodymanic viticultural practices since 2014 and, in 2021, attained biodynamic certification for their vineyards, which predominantly comprise old vine parcels. In the winery, minimal intervention is the goal, allowing the grapes to express the true nature of the vineyards from which they come. The couple’s range is sophisticated and gastronomic as one would expect given they hail from families of wine growers and restaurateurs respectively.
