In the chalky clay (calcário) mid-slopes of Ois de Bairro, Filipa and William have converted their vineyards to biodynamic cultivation, understanding them better and creating “authentic wines without makeup”. The bical varietal is perfectly suited to the local climate with its Atlantic influence. In the winery, the grapes are gently pressed and the resulting must is transferred to 500-litre barrels for fermentation with native yeasts.

If broached young, we recommend decanting, it really rewards time and air to show off its many intricate layers of fruit and minerals, lees and oak. Serve at 10ºC. Remove from the fridge 30 minutes before serving. Recommended further maturing for up to 10 years

A real foodwine, fish and shellfish prepared as naturally as possible (steamed, poached, grilled). Braised sweetbread, poached poultry and veal and pork fillet will do the job.
