Sourced from a one hectare parcel of the family’s oldest vines on sand over chalky clay soil, the hand-harvested grapes were picked vine by vine to ensure that the skins were fully ripe. Naturally fermented on skins (‘curtimenta’) in the family’s traditional cellar’s stone lagares, then pressed to used French oak 500l barrels, where the wine underwent a natural malolactic fermentation. Following six months in barrel with vigorous battonage, the wine was bottled and remained in the family’s cellars until ready for release.
