Zip-a-Dee-Doo-Dah, zip-a-dee-ay, this wine will put a spring in your step. It reveals mouth-wateringly crunchy apple, woollier apple notes and apricot close to the stone – a trace of bitterness. Wormwood, smoky flint and salty green olive nuances snag the attention going through. But not as much as its charge of vibrant acidity. This is bottled electricity, with terrific acid drive. Leocádio’s skilful use of oak and lees builds subtle savoury layers around the acid backbone.

Daemon comes from Quinta da Seara in São Cosmado (Armamar), which is located at 650m above sea level on very poor granite soil. Aged around 15 years old, the block planted varieties - Gouveio (30%), Cerceal (30%) and Malvasia Fina (40%) - are vinified separately, then blended. Following careful manual selection, the hand-harvested grapes were de-stemmed, gently crushed, then pressed in a pneumatic press. After settling, the must and fine lees were fermented in temperature-controlled stainless steel, then seasoned French oak barrels. The resulting wine aged for another 12 months on lees.
