Predominantly Encruzado, Bical and Malvasia Fina

Hand-picked into 15 kg boxes, the grapes were sent by gravity directly to the press.  Following a slow, gentle pressing, the must was decanted into temperature controlled stainless steel vats and naturally fermented.  It underwent partial malolactic fermentation in Puligny Montrachet barrels where the wine aged for 11 months.
