The grapes are handpicked into small 20 kg plastic cases and immediately brought to the winery for further hand selection. After destemming without crushing and three days of cold maceration in a egg formed plastic vessel the must is let to start spontaneous fermentation for five months. After pressing, the wine stays in the egg until bottling.
